I think I already know the answer, but will ask anyway.

Will a 31" tire on Alum rim fit on the factory spare tire holder without ripping apart tailgate?

I do not do any hard core trails, mostly dirt roads, wash board type stuff and will be on the beach at times fishing.

It has been so long but I am certain it doesn?t because I modified mine to hold that exact same size about ten years ago. I bought a length of metric rod the same as the lug nuts, drilled out the old studs, cut three lengths out of the rod and used extra nuts to jam the appropriate length of rod to accommodate the rim/tire combo. Worked really well.
 
Now don't quote me on this because I don't have a spare.

I was told that the hinges  were the weak point.

On mine you can see where somebody ripped the upper hinge off the body and welded it back on.

I have a 31?x10.5? tire and it holds it well. I would say it?s the max I would put on it though.👍I am thinking I might make a small shim that is easy to remove just on the bottom so that some of the weight goes onto the bumper. But it?s been used for about ten years without any abnormal wear on the door. That being said have not done any hardcore wheeling or heavy bumps.

I have 31-10.50-15. tires on 15X8 wheels.

Did not want to carry a heavy set up like this one on the spare tire carrier, so I opted for the stock wheel as the spare with a tire that is equal in diameter and circumference to the 31-10.50-15

It is a 700-15. tire

It is only narrower but lighter and less bulky  which is what I need to carry around and what would get me back on the road without any issues , here a photo.

No need to carry around a monster set up that only asks for extra expenditure for the extra wheel and tire, plus the added stress placed on tailgate and mounting points and any special adaptation to have the wider wheel and tire fit the tire carrier.

Try Military tires.  The nomenclature (size codes) is different but military tires for military vehicles are big in diameter but not necessarily wide

:welder: Military tires are narrower, not an expert  in
military tires nomenclature but there are tall and narrow, trying to find out those sizes 
 
I'm seriously looking at a 35" atv tire, 10" width...and getting crazy, mounting it on an original 5" wide samurai rim.
It's just gotta be my "get outta here" space saver, lightweight, doughnut spare.
 
I?m running 32x10x15 UTV tires and they are fantastic however 32? seemed to be the largest common size. 35? are probably pretty rare and expensive

I have a 33x10.50 on my tailgate with a 5x5.5 extension on the carrier to make it fit. No issues after several years as well however I like the idea of lightening up the whole thing as that 33 on a steel 15x7 rim is heavy.
 
I think the solution to tall and skinny is to find a 16-in Grand Vitara wheel. It's easier to find skinny tall 16 inch tires.
