best way to make a pinion protector

Welding plate to cast iron is more of a science, then just doing it.

You have to take the 3rd apart, just to get the seal out. then heat it up to like 300 in an oven, then weld it, and let it cool gradually. 

7018 should work good for it.

Should be a video on youtube about doing it.

Thirds are cast steel, housings are stamped steel.  The protection he's after most likely will require something off the third.
 
Appears some variation of Calmini's bolt on armor for the Track/Kicks would work.  They don't appear to be too technical of a design to fabricate a similar one.  Build a model out of cardboard, first.  Then cut your plate to size, tac it in place, check for fitment,  and then weld it.  The hardest part would probably be cutting the plate (1/4"?) if you don't have access to a band saw or plasma cutter....  or notching it and then finding SOMETHING that could fold it/break it over to the angle/s you desired then welding the notches and .
